- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- 1/2 cup milk
Instructions
- Brown the beef in a large skillet over medium-high heat, breaking it up until fully cooked. Drain excess fat.
- Add taco seasoning and water, then simmer for about 5 minutes to thicken.
- In a large pot, boil salted water and cook elbow macaroni according to package instructions until al dente. Drain and set aside.
- In the same pot, heat olive oil and add diced tomatoes, cooking for 2-3 minutes.
- Combine cooked macaroni and beef mixture with tomatoes, stirring thoroughly.
- Stir in milk, then add shredded cheddar and mozzarella, mixing until melted and creamy.
- Add sour cream and mix until fully incorporated; remove from heat and top with chopped green onions.
- Serve hot and enjoy!
Notes
Use lean ground beef and adjust seasoning based on personal preference. This dish can be made ahead of time and reheated.
