Description

A fun twist on traditional comfort foods, blending the flavors of tacos with creamy macaroni and cheese.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can diced tomatoes (14.5 oz)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 tablespoon olive oil
  • 1/2 cup milk

Instructions

  1. Brown the beef in a large skillet over medium-high heat, breaking it up until fully cooked. Drain excess fat.
  2. Add taco seasoning and water, then simmer for about 5 minutes to thicken.
  3. In a large pot, boil salted water and cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  4. In the same pot, heat olive oil and add diced tomatoes, cooking for 2-3 minutes.
  5. Combine cooked macaroni and beef mixture with tomatoes, stirring thoroughly.
  6. Stir in milk, then add shredded cheddar and mozzarella, mixing until melted and creamy.
  7. Add sour cream and mix until fully incorporated; remove from heat and top with chopped green onions.
  8. Serve hot and enjoy!

Notes

Use lean ground beef and adjust seasoning based on personal preference. This dish can be made ahead of time and reheated.
