- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can diced tomatoes (14.5 oz)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- 1/2 cup milk
Instructions
- Heat a large skillet over medium-high heat and add the ground beef, breaking it apart with a spatula as it cooks until browned.
- If there’s excess fat, drain it away, then toss in the taco seasoning and water. Stir well and let it simmer for about 5 minutes; the mixture should thicken slightly.
- Meanwhile, cook the elbow macaroni in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In the same pot, add olive oil over medium heat, followed by the diced tomatoes. Cook for 2-3 minutes, stirring occasionally.
- Stir in the cooked macaroni and the seasoned beef, mixing everything thoroughly.
- Pour in the milk, then sprinkle the cheddar and mozzarella cheese over the mixture. Stir until melted and blended together.
- Finally, fold in the sour cream to achieve that creamy texture. Remove from heat and top with chopped green onions.
