- 8 oz pasta (rotini or penne)
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1/4 cup sour cream (optional)
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once it’s al dente, drain and set aside.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Add the taco seasoning and follow package instructions to infuse the meat with flavor.
- In a large mixing bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro. Mix well.
- Pour in the salsa and mix thoroughly. Adjust seasoning with salt and pepper as needed.
- Just before serving, sprinkle shredded cheese on top and add sour cream if desired.
- Serve immediately or store it in the refrigerator for meal prep.
Notes
Experiment with different cheeses or add fresh lime juice for a zingy flavor. This salad can also be made vegan by substituting meat with lentils or mushrooms.
