- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 2 cups beef or chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup corn (optional)
- 1/2 cup chopped onions (optional)
- Salt and pepper to taste
- Chopped cilantro or green onions for garnish
Instructions
- In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat if necessary.
- If using chopped onions, add them to the pot and cook until softened.
- Stir in the taco seasoning, diced tomatoes with green chilies, broth, and optional corn.
- Bring the mixture to a simmer, then add the spaghetti. Stir to combine and cover the pot. Cook for 10-12 minutes or until spaghetti is al dente, stirring occasionally.
- Remove from heat and stir in the shredded cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped cilantro or green onions.
