Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups beef or chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (optional)
  • 1/2 cup chopped onions (optional)
  • Salt and pepper to taste
  • Chopped cilantro or green onions for garnish

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat if necessary.
  2. If using chopped onions, add them to the pot and cook until softened.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, broth, and optional corn.
  4. Bring the mixture to a simmer, then add the spaghetti. Stir to combine and cover the pot. Cook for 10-12 minutes or until spaghetti is al dente, stirring occasionally.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro or green onions.
