- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, tortilla chips
Instructions
- In a large pot, brown the ground beef or turkey with the chopped onion over medium heat until the meat is fully cooked.
- Drain the excess fat from the meat to keep the soup light and tasty.
- Stir in black beans, corn, diced tomatoes, diced tomatoes with green chilies, taco seasoning, and broth. Make sure all ingredients are combined well.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 20-30 minutes.
- Season with salt and pepper to taste before serving.
- Serve hot and add optional toppings as desired.
