A delicious twist on traditional tacos, Taco Stuffed Shells are filled with seasoned meat, beans, and cheese, making for a fun and family-friendly meal.

- 12 jumbo pasta shells
- 1 pound ground beef or turkey
- 1 taco seasoning packet
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1/2 cup corn kernels, canned or frozen
- 1/4 cup chopped green onions
- 1 cup shredded lettuce, for serving
- Sour cream, for serving
Instructions
- Preheat oven to 350°F (175°C).
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain off any excess fat.
- Stir in the taco seasoning and salsa, mixing well.
- Add the black beans, corn, and green onions to the mixture, cooking for another 2 minutes.
- Stuff each cooked pasta shell with the taco filling and place them in a baking dish.
- Sprinkle the shredded cheddar cheese over the top of the stuffed shells.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with shredded lettuce and a dollop of sour cream.
Notes
Make sure not to overcook the pasta shells; they should be firm enough to hold the filling. You can prepare the filling a day ahead for easy assembly.
