  • 3/4 cup cornmeal
  • 1/4 cup flour (or gluten-free blend)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup unsweetened plant-based milk (or regular milk)
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for about 3 minutes until softened and fragrant.
  2. Add the chopped red and green bell peppers, cooking for another 5 minutes until they start to soften.
  3. Stir in black beans, corn, diced tomatoes, and vegetable broth. Season with chili powder, cumin, smoked paprika, salt, and pepper. Bring to a gentle simmer and cook uncovered for about 10 minutes.
  4. In a bowl, whisk together the cornmeal, flour, baking powder, and salt. Incorporate the olive oil and milk until you have a thick batter. If using, fold in cilantro.
  5. Drop spoonfuls of the dumpling batter into the simmering soup (about 8 to 10 dumplings). Cover and let cook for 12-15 minutes until the dumplings are firm.
  6. Ladle the hot soup into bowls and add optional toppings like fresh cilantro, avocado slices, or lime wedges.
