- 2 tablespoons tandoori spice mix
- 1 cup basmati rice
- 2 cups chicken broth
- 1 onion (sliced)
- 2 tablespoons yogurt
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro (for garnish)
Instructions
- Marinate the chicken thighs with the tandoori spice mix, yogurt, and a pinch of salt. Let sit for at least 30 minutes.
- Heat vegetable oil in a large pan over medium heat. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken thighs to the pan, cooking for 5-7 minutes on each side until nicely browned.
- Stir in the basmati rice and pour in the chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes.
- Once cooked, fluff the rice with a fork and garnish with fresh cilantro.
