Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons tandoori spice mix
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 onion (sliced)
  • 2 tablespoons yogurt
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the chicken thighs with the tandoori spice mix, yogurt, and a pinch of salt. Let sit for at least 30 minutes.
  2. Heat vegetable oil in a large pan over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the marinated chicken thighs to the pan, cooking for 5-7 minutes on each side until nicely browned.
  4. Stir in the basmati rice and pour in the chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes.
  5. Once cooked, fluff the rice with a fork and garnish with fresh cilantro.

Notes
