  • 1/2 cup crumbled cotija cheese, extra for topping
  • 1 tbsp lime juice (to taste)
  • 3 cups prepared rice
  • Fresh cilantro leaves, for garnish
  • Lime wedges (from 1 lime)
  • Reserved sour cream and cotija cheese, for garnish

Instructions

  1. Begin by marinating the chicken thighs with lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and black pepper. Mix well and coat the chicken evenly. Let it marinate for at least 15 minutes.
  2. Prepare the sweet corn by grilling or sautéing it from frozen.
  3. Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F. Remove from heat and let it rest before slicing.
  4. In a separate bowl, mix sour cream with mayonnaise and additional lime juice to create a creamy sauce.
  5. Assemble the bowl by placing a base of prepared rice, topped with sliced chicken, sweet corn, red onion, and creamy sauce. Finish with cotija cheese, fresh cilantro, and lime wedges.

Notes

For enhanced flavor, consider marinating the chicken for up to 2 hours. Fresh corn gives the best flavor, but canned or frozen works in a pinch. Always check the internal temperature of the chicken for safety.
