Instructions
- Begin by marinating the chicken thighs with lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and black pepper. Mix well and coat the chicken evenly. Let it marinate for at least 15 minutes.
- Prepare the sweet corn by grilling or sautéing it from frozen.
- Heat a skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F. Remove from heat and let it rest before slicing.
- In a separate bowl, mix sour cream with mayonnaise and additional lime juice to create a creamy sauce.
