Description

Delicious stuffed peppers filled with tender chicken, pineapple, and rice, drizzled with teriyaki sauce.


Ingredients

  • 4 bell peppers
  • 1 pound chicken breast, diced
  • 1 cup pineapple, diced
  • 2 cups cooked rice
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers, removing the seeds.
  3. In a skillet, heat olive oil over medium heat. Add the diced chicken and cook for 5-7 minutes until browned.
  4. Stir in the pineapple, cooked rice, and teriyaki sauce. Season with salt and pepper.
  5. Stuff each bell pepper with the chicken and rice mixture.
  6. Place the stuffed peppers upright in a baking dish and cover with foil.
  7. Bake for 25-30 minutes until the peppers are tender.
  8. Remove foil and bake for an additional 5-10 minutes for a slight char on top.
  9. Garnish with green onions before serving.
