Description

Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon turmeric
  • 1/4 cup chopped fresh parsley (optional for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large saucepan, heat the olive oil and butter over medium heat until the butter is melted and bubbling.
  3. Add the finely chopped onion and sauté for 3-4 minutes until translucent.
  4. Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  5. Add the rinsed rice to the pan, stirring well to coat it with oil and butter, and cook for about 3-4 minutes until lightly toasted.
  6. Pour in the chicken broth and soy sauce, stirring in the paprika, dried parsley, salt, black pepper, cayenne pepper (if using), and turmeric.
  7. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  8. Remove from heat, let sit covered for 5 minutes, fluff with a fork, and garnish with fresh parsley if desired.
