Description

Deliciously exotic Thai Chicken Meatballs in a creamy coconut curry sauce, perfect for weeknight dinners or entertaining.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 cup chicken broth
  • Fresh cilantro for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, chopped cilantro, green onions, egg, minced garlic, grated ginger, soy sauce, fish sauce, optional red pepper flakes, salt, and pepper. Mix well.
  3. Roll the mixture into small meatballs (about 1 inch in diameter) and arrange on the baking sheet.
  4. Bake meatballs for 18-20 minutes, or until cooked through and slightly browned.
  5. While meatballs bake, prepare the coconut curry sauce. Heat vegetable oil in a skillet over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes.
  6. Stir in minced garlic, grated ginger, and red curry paste, cooking for 2 minutes until fragrant.
  7. Pour in the coconut milk, fish sauce, lime juice, brown sugar, and chicken broth. Stir to combine and bring to a gentle simmer.
  8. Once the meatballs are done, add them to the coconut curry sauce. Let them simmer for 5-7 minutes to absorb the flavors.
  9. Serve the meatballs and sauce over cooked jasmine rice and garnish with fresh cilantro.
