- 1 lb ground chicken or turkey
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely chopped onion
- 1 tablespoon fish sauce
- 1 tablespoon red curry paste
- 1 teaspoon ginger, grated
- 1 tablespoon lime juice
- 1 egg
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 1 can (13.5 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/2 cup chicken broth
- 1 red bell pepper, thinly sliced
- 1 cup baby spinach
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Cooked rice, for serving
Instructions
- Preheat the oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
- In a large bowl, mix ground chicken or turkey, breadcrumbs, cilantro, onion, fish sauce, red curry paste, ginger, lime juice, egg, salt, and pepper until well combined.
- Shape the mixture into small meatballs and place them on the prepared baking sheet.
- Bake the meatballs for 15-20 minutes, until cooked through and slightly browned.
- Meanwhile, heat vegetable oil in a skillet over medium heat. Add 2 tablespoons of red curry paste and sautรฉ for about a minute.
- Stir in coconut milk, fish sauce, sugar, and chicken broth. Bring to a simmer and cook for about 5 minutes.
- Add the sliced red bell pepper and cook for an additional 3-4 minutes.
- Once the meatballs are done, gently transfer them to the coconut curry sauce and stir to coat.
- Mix in baby spinach until it wilts.
- Serve over cooked rice, garnished with fresh cilantro and lime wedges.
Notes
Mix the meat mixture gently to avoid tough meatballs. Adjust spice levels according to taste.
