  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • Vegetable oil, for frying
  • 4 brioche buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced pickles
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha hot sauce
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine the buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar. Whisk until everything is fully integrated.
  2. Place the chicken thighs in the marinade, ensuring they are completely submerged. Cover the bowl and refrigerate for at least four hours, or overnight for optimal flavor.
  3. In another bowl, mix the all-purpose flour, cornstarch, baking powder, salt, garlic powder, and ground black pepper.
  4. Remove the chicken thighs from the marinade and let the excess drip off. Coat each piece thoroughly in the flour mixture, pressing it into the meat for a good crunch.
  5. Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Carefully place the chicken pieces in hot oil, frying for about 7-8 minutes or until golden brown and fully cooked.
  6. While the chicken is frying, combine the mayonnaise and Sriracha in a small bowl for a flavor-packed spread.
  7. Toast the brioche buns until they are golden and slightly crispy.
  8. Spread the spicy mayo on the top and bottom of each bun. Place a piece of fried chicken on the bottom bun, top with shredded lettuce and sliced pickles, then add the top bun.
  9. Present the sandwiches hot with lime wedges on the side.

Notes

For the best flavor, marinate the chicken overnight. Adjust Sriracha for desired spice level.
