- 1 cup buttermilk
- 2 tablespoons Thai red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce

- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon garlic powder

- Vegetable oil, for frying
- 4 brioche buns
- 1 cup shredded lettuce
- 1/2 cup sliced pickles
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha hot sauce
- Lime wedges, for serving
Instructions
- In a large bowl, combine the buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar. Whisk until everything is fully integrated.
- Place the chicken thighs in the marinade, ensuring they are completely submerged. Cover the bowl and refrigerate for at least four hours, or overnight for optimal flavor.
- In another bowl, mix the all-purpose flour, cornstarch, baking powder, salt, garlic powder, and ground black pepper.
- Remove the chicken thighs from the marinade and let the excess drip off. Coat each piece thoroughly in the flour mixture, pressing it into the meat for a good crunch.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Carefully place the chicken pieces in hot oil, frying for about 7-8 minutes or until golden brown and fully cooked.
- While the chicken is frying, combine the mayonnaise and Sriracha in a small bowl for a flavor-packed spread.
- Toast the brioche buns until they are golden and slightly crispy.
- Spread the spicy mayo on the top and bottom of each bun. Place a piece of fried chicken on the bottom bun, top with shredded lettuce and sliced pickles, then add the top bun.
- Present the sandwiches hot with lime wedges on the side.
Notes
For the best flavor, marinate the chicken overnight. Adjust Sriracha for desired spice level.
