Description

Butter Chicken, or Murgh Makhani, features tender chicken in a rich, creamy tomato sauce with aromatic spices.


Ingredients

  • 600 g chicken breast, diced
  • 150 g plain yogurt
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 tbsp grated ginger
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp chili powder (optional)
  • 400 g canned crushed tomatoes
  • 150 ml cream (or coconut milk for lactose-free)
  • 1 tsp sugar
  • Salt, to taste
  • Fresh coriander, for garnish

Instructions

  1. Marinate the Chicken: Combine the yogurt, turmeric, cumin, garam masala, paprika, salt, lemon juice, and diced chicken in a bowl. Mix well and let it marinate in the fridge for at least 30 minutes.
  2. Sauté the Chicken: Heat oil in a pan over medium heat. Add the marinated chicken and cook until golden brown, about 6-8 minutes. Set aside.
  3. Prepare the Sauce: In the same pan, melt butter. Add chopped onion and sauté until translucent, about 5 minutes. Then add garlic and ginger, cooking for 1 minute until fragrant.
  4. Add Spices and Tomatoes: Stir in coriander powder, garam masala, and chili powder if using. Pour in crushed tomatoes and simmer for 10 minutes.
  5. Mix in Cream and Sugar: Stir in cream (or coconut milk) and sugar, allowing to simmer for an additional 5 minutes. Adjust salt as needed.
  6. Combine Chicken and Sauce: Return chicken to the pan and mix everything together. Cook for another 5 minutes to heat through.
  7. Serve: Garnish with fresh coriander and enjoy with basmati rice or naan.

Notes

Marinating the chicken overnight enhances flavor. Use fresh spices for the best results.
