Description

A delightful dish that combines the flaky texture of tilapia with a rich, smoky roasted red pepper sauce, perfect for any occasion.


Ingredients

  • 4 tilapia fillets (about 1 lb)
  • 1 cup roasted red peppers (jarred or homemade)
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. In a blender, combine the roasted red peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  3. Pour half of the roasted pepper sauce into the greased baking dish. Place the tilapia fillets on top.
  4. Coat the fillets with the remaining sauce, ensuring each piece is covered.
  5. Bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork. Garnish with fresh basil or parsley before serving.

Notes

Choose fresh tilapia fillets, and adjust sauce spiciness to your taste with red pepper flakes. Store leftovers in the refrigerator for up to three days.
