  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish
  • Optional: 1 tbsp balsamic vinegar for added depth of flavor

Instructions

  1. Cook the pasta: Begin by bringing a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente, reserve some pasta water, and set aside.
  2. Prepare the sauce: Heat olive oil in a skillet over medium heat. Cook garlic for 1-2 minutes until fragrant.
  3. Add the tomatoes and seasoning: Stir in crushed tomatoes, oregano, basil, and red pepper flakes. Let it simmer for 5-7 minutes.
  4. Stir in the ricotta: Reduce heat to low and mix in ricotta cheese. Cook for an additional 2-3 minutes, adding reserved pasta water if necessary.
  5. Combine pasta and sauce: Toss the drained pasta into the skillet, mixing to coat with the sauce. Sprinkle with Parmesan.
