Description

A quick and hearty cheese tortellini dish with fresh spinach and cherry tomatoes, perfect for busy weeknights.


Ingredients

  • 1 package (9 oz) cheese tortellini
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add cherry tomatoes to the skillet and cook for another 3-4 minutes until softened. Add fresh spinach and stir until wilted.
  4. Combine the cooked tortellini with the sautéed vegetables in the skillet. Season with salt, pepper, and red pepper flakes if desired. Stir until everything is heated through.
  5. Remove from heat and sprinkle with grated Parmesan cheese before serving warm.
