- 1 package (9 oz) cheese tortellini
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add cherry tomatoes to the skillet and cook for another 3-4 minutes until softened. Add fresh spinach and stir until wilted.
- Combine the cooked tortellini with the sautéed vegetables in the skillet. Season with salt, pepper, and red pepper flakes if desired. Stir until everything is heated through.
- Remove from heat and sprinkle with grated Parmesan cheese before serving warm.
