- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 large carrots, sliced
- 3 medium potatoes, diced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons vegetable oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes in batches, avoiding overcrowding. Brown them on all sides.
- Remove the beef from the pot and set it aside. In the same pot, add the onions and garlic, sautéing until they turn translucent.
- Stir in the tomato paste, dried thyme, and season with salt and pepper.
- Return the beef to the pot, then add the sliced carrots, diced potatoes, beef broth, and the bay leaf.
- Bring everything to a boil, then reduce the heat to low and cover the pot. Allow it to simmer for about 1.5 to 2 hours.
- In the last 10 minutes of cooking, add the frozen peas.
- Before serving, remove the bay leaf and ladle the stew into bowls.
Notes
Browning the beef is essential for flavor. Feel free to customize with different vegetables or proteins as desired.
