Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh herbs (such as dill or parsley) for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes.
  3. Once the potatoes are cooked through, use an immersion blender to puree the soup until smooth.
