Ingredients

- 1 lb lean ground turkey
- 2 cans (14.5 oz each) canned diced tomatoes
- 1 can (15 oz) kidney beans, rinsed
- 1 medium onion, diced
- 1 bell pepper (any color), diced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by dicing the onion and bell pepper.
- In a large pot, heat olive oil over medium heat. Sauté the onion and bell pepper until softened (about 5 minutes).
- Add ground turkey; cook until browned throughout.
- Stir in chili powder, cumin, garlic powder, salt, and pepper; cook for 1 minute.
- Add diced tomatoes (with juices) and kidney beans; mix well.
- Bring to a gentle boil, then reduce heat to low. Cover partially and simmer for at least 30 minutes.
Notes
For a spicier chili, add chopped jalapeños or a pinch of cayenne pepper. For a thicker chili, let it simmer uncovered for the last 10-15 minutes.
