- 1 can black beans, drained and rinsed
- 1 cup corn

Instructions
- In a large skillet over medium heat, cook the ground turkey until browned, breaking it apart as it cooks (5-7 minutes).
- Drain any excess fat from the skillet.
- Add the enchilada sauce, black beans, and corn; stir until well mixed.
- Bring to a simmer and cook for about 5 minutes.
- Sprinkle shredded cheese over the mixture, cover, and let it sit until cheese is melted and bubbly.
- Serve hot, garnished with optional toppings.
