Ingredients

  • 1 can enchilada sauce
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • Salt and pepper to taste
  • Optional toppings: cilantro, avocado, sour cream

Instructions

  1. In a large skillet over medium heat, cook the ground turkey until browned, breaking it apart as it cooks (5-7 minutes).
  2. Drain any excess fat from the skillet.
  3. Add the enchilada sauce, black beans, and corn; stir until well mixed.
  4. Bring to a simmer and cook for about 5 minutes.
  5. Sprinkle shredded cheese over the mixture, cover, and let it sit until cheese is melted and bubbly.
  6. Serve hot, garnished with optional toppings.
