- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1 tbsp instant coffee granules

- 2 whole large eggs, cold
- 2 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1/2 cup semi-sweet chocolate chips, plus more for topping
- 1/2 cup chopped pecans, plus more for topping
- 1 cup light brown sugar (for caramel)
- 6 tbsp unsalted butter (for caramel)
- 1/2 cup heavy cream (for caramel)
- 1 tsp vanilla extract (for caramel)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9 or 8×8 inch baking pan with aluminum foil and lightly spray it with cooking spray or grease with butter. Set aside.
- Melt the unsalted butter in a medium saucepan over medium heat until it turns a light brown color and emits a caramel aroma (about 5-10 minutes). Keep a close watch to prevent burning.
- Transfer the browned butter into a large mixing bowl. Add granulated sugar, light brown sugar, cocoa powder, salt, instant coffee granules, and baking powder. Mix well, then let it rest for about 5 minutes to cool down.
- Incorporate the cold eggs and vanilla extract into the mixture, mixing until shiny and smooth.
- Gently fold in the all-purpose flour, being careful not to overmix. Fold in the chocolate chips and chopped pecans until evenly distributed.
- Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes until a toothpick comes out clean or with a few moist crumbs.
- Let the brownies cool completely in the pan. For the caramel sauce, combine brown sugar, butter, and heavy cream in a saucepan over low-medium heat. Cook for about 8 minutes, stirring until thickened. Stir in vanilla extract and let cool in the refrigerator.
- Once the brownies are cool, drizzle the caramel over the top and sprinkle with more pecans and chocolate chips. Chill in the fridge for at least 30 minutes to set before slicing.
