- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian herbs
- Salt and pepper to taste
- 1 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 cups fresh spinach
Instructions
- In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian herbs, salt, and pepper. Mix until well combined and form into meatballs.
- In a large skillet, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides, about 6-8 minutes.
- Add sun-dried tomatoes and chicken broth, bringing it to a simmer.
- Stir in the orzo and cook for about 10 minutes until tender, stirring occasionally to prevent sticking.
- Add the fresh spinach toward the end of cooking, allowing it to wilt. Serve warm and enjoy!
Notes
For a richer flavor, use homemade or low-sodium chicken broth. Top with extra Parmesan cheese before serving.
