Description

A cozy dish featuring tender chicken meatballs, chewy orzo, and fresh spinach, enriched with savory garlic and sun-dried tomatoes.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian herbs
  • Salt and pepper to taste
  • 1 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups fresh spinach

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian herbs, salt, and pepper. Mix until well combined and form into meatballs.
  2. In a large skillet, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides, about 6-8 minutes.
  3. Add sun-dried tomatoes and chicken broth, bringing it to a simmer.
  4. Stir in the orzo and cook for about 10 minutes until tender, stirring occasionally to prevent sticking.
  5. Add the fresh spinach toward the end of cooking, allowing it to wilt. Serve warm and enjoy!

Notes

For a richer flavor, use homemade or low-sodium chicken broth. Top with extra Parmesan cheese before serving.
