Description

Ingredients

  • 1 lb ground chicken
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian herbs
  • 1/2 cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large bowl, mix ground chicken with minced garlic, Italian herbs, salt, and pepper. Form the mixture into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned and cooked through, about 10-12 minutes.
  3. Add sun-dried tomatoes and spinach to the skillet, sautéing until spinach wilts.
  4. Stir in orzo and add enough water to cover. Bring to a boil, then reduce heat and let simmer until orzo is tender, about 10 minutes.
  5. Before serving, sprinkle in grated Parmesan cheese and stir until melted and creamy.

Notes

For added flavor, consider using fresh herbs and serve with a side salad and white wine.
