- 1 lb ground chicken
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp Italian herbs
- 1/2 cup Parmesan cheese, grated
- 2 cups fresh spinach
- 1 cup orzo pasta
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- In a large bowl, mix ground chicken with minced garlic, Italian herbs, salt, and pepper. Form the mixture into small meatballs.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned and cooked through, about 10-12 minutes.
- Add sun-dried tomatoes and spinach to the skillet, sautéing until spinach wilts.
- Stir in orzo and add enough water to cover. Bring to a boil, then reduce heat and let simmer until orzo is tender, about 10 minutes.
- Before serving, sprinkle in grated Parmesan cheese and stir until melted and creamy.
Notes
For added flavor, consider using fresh herbs and serve with a side salad and white wine.
