Description

Twice baked potatoes are a classic comfort food with a creamy, cheesy filling and crispy skins, perfect for any meal or gathering.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup unsalted butter (softened)
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste
  • 1/2 cup bacon bits (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Bake for 45-60 minutes until fork-tender.
  3. Let the potatoes cool for 10-15 minutes, slice in half lengthwise, and scoop out the flesh into a bowl.
  4. Mash the potato flesh with butter, sour cream, cheese, salt, and pepper until smooth. Fold in chopped chives.
  5. Spoon the mixture back into each potato skin, top with additional cheese or bacon bits, and bake at 350°F (175°C) for 15-20 minutes until heated through and golden.

Notes

Pair with a crisp green salad or steamed veggies. Decorate with extra chives for presentation.
