- 8 oz rotini pasta
- 1 cup cooked chicken, diced
- 1 cup diced turkey or ham
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/2 cup cooked bacon, crumbled
- 1 cup shredded lettuce
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt or sour cream
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a pot of salted water to boil, add the rotini pasta, and cook according to package instructions. Drain and rinse under cold water.
- In a large mixing bowl, add cooked pasta, diced chicken, turkey or ham, cherry tomatoes, cucumber, red onion, crumbled bacon, and shredded lettuce. Toss gently.
- In a separate bowl, mix mayonnaise, Greek yogurt, Dijon mustard, salt, and pepper until smooth. This is the dressing.
- Pour dressing over the pasta salad and toss to coat evenly.
- Cover and chill in the refrigerator for at least 30 minutes before serving. Garnish with fresh parsley before serving.
Notes
Letting the salad chill enhances the flavors. Adjust seasoning before serving and try different proteins according to preference.
