Description

Ingredients

  • 3/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1 Large egg, lightly beaten
  • 1/2 cup Milk (whole or 2%)
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Fresh or frozen blueberries (do not thaw if frozen)
  • 1/2 cup All-purpose flour (for crumb topping, optional)
  • 1/4 cup Packed brown sugar (for crumb topping, optional)
  • 1/4 teaspoon Ground cinnamon (for crumb topping, optional)
  • 2 tablespoons Cold unsalted butter (for crumb topping, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl. This is your dry mix.
  3. Whisk together the melted butter, egg, milk, and vanilla extract in a separate medium bowl. This is your wet mix.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined; be careful not to overmix, a few lumps are just fine.
  5. Fold in the blueberries. If using frozen berries, toss them with 1 teaspoon of flour before adding to the batter.
  6. Prepare the crumb topping (if using) by combining the flour, brown sugar, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  7. Divide the batter evenly among the 12 muffin cups, filling them about two-thirds full.
  8. Sprinkle the crumb topping evenly over each cup.
  9. Bake for 18 to 20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh ingredients for the best taste. Don’t overmix to keep muffins fluffy.
