- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar

- 1 egg yolk
- 1 cup milk
- 3 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix flour, butter, powdered sugar, and salt until crumbly. Add the egg yolk and combine until a dough forms. Press the dough into a tart pan and prick with a fork. Bake for 15 minutes or until golden.
- Prepare the custard: In a saucepan, heat milk until just boiling. In a separate bowl, whisk together egg yolks, granulated sugar, and cornstarch. Slowly pour the hot milk into the egg mixture, whisking constantly. Then, return this mixture back to the saucepan. Cook on medium heat, stirring continuously, until thickened. Finish by stirring in the vanilla extract.
- Assemble the tart: Pour the custard into the baked tart shell and let it cool completely. Once cooled, top with freshly sliced strawberries.
- Chill before serving: Refrigerate the tart for at least 1 hour before serving. This allows the flavors to meld and makes slicing a breeze.
