- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 4 large egg whites (aged)
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Buttercream frosting (for filling)
Instructions
- Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
- Sift together the almond flour and powdered sugar in a bowl.
- In a separate bowl, beat the aged egg whites on medium speed until frothy. Gradually add the cream of tartar and granulated sugar, beating until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites until just combined.
- Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30-60 minutes until a skin forms.
- Bake for 15-20 minutes, then allow them to cool completely before moving them.
- Once cooled, pipe buttercream onto half of the macarons and sandwich with the other half.
Notes
Aging egg whites improves the texture of the macaron. Use a kitchen scale for accuracy when measuring ingredients.
