Description

Delicious Vanilla Strawberry Shortcake Cupcakes that combine soft cake with fresh strawberries and whipped cream.


Ingredients

  • 1 1/2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter, softened
  • 2 Large eggs
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Fresh strawberries, chopped
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • As needed Additional strawberries for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Add the dry ingredients to the butter mixture, alternating with the milk, mixing just until combined.
  6. Fold in the chopped strawberries gently.
  7. Fill each cupcake liner about 2/3 full with the batter.
  8. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
  9. Beat the heavy whipping cream with powdered sugar until stiff peaks form.
  10. Once cooled, scoop out a small portion from the center of each cupcake and fill with chopped strawberries.
  11. Top each cupcake with whipped cream frosting and a fresh strawberry for garnish.
  12. Serve and enjoy!

Notes

For best results, do not overmix the batter. Use fresh strawberries for the best flavor and consider chilling your whipping cream for better volume.
