Ingredients

- 1 lb king trumpet mushrooms
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 2 tbsp lime juice
- 1 tsp salt
- 1/2 tsp black pepper
- 8 corn tortillas
- Toppings (e.g., avocado, cilantro, onions, salsa)
Instructions
- Slice the king trumpet mushrooms into thin strips.
- In a pan, heat olive oil over medium heat and sauté chopped garlic and onion until translucent.
- Add the sliced mushrooms, cumin, chili powder, smoked paprika, lime juice, salt, and pepper.
- Cook until the mushrooms are browned and tender, about 10-15 minutes.
- Warm corn tortillas in a separate pan.
- Fill each tortilla with the mushroom mixture and top with your favorite toppings.
Notes
Don’t skip the lime juice for brightness. Get creative with toppings for a unique taco experience.
