Description

Delicious plant-based tacos made with king trumpet mushrooms, spices, and topped with your favorite garnishes.


Ingredients

  • 1 lb king trumpet mushrooms
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 corn tortillas
  • Toppings (e.g., avocado, cilantro, onions, salsa)

Instructions

  1. Slice the king trumpet mushrooms into thin strips.
  2. In a pan, heat olive oil over medium heat and sauté chopped garlic and onion until translucent.
  3. Add the sliced mushrooms, cumin, chili powder, smoked paprika, lime juice, salt, and pepper.
  4. Cook until the mushrooms are browned and tender, about 10-15 minutes.
  5. Warm corn tortillas in a separate pan.
  6. Fill each tortilla with the mushroom mixture and top with your favorite toppings.

Notes
