- 1 cup brown sugar
- 1/2 cup plant-based oil

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder

- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup walnuts or pecans (optional)
- Vegan cream cheese frosting (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mix the grated carrots, brown sugar, and oil together in a large bowl.
- Pour in the almond milk and stir until nicely combined.
- Mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt thoroughly in a separate bowl.
- Add the dry ingredients to the wet mixture and stir until just combined; avoid over-mixing!
- Fold in the walnuts or pecans if using.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for 10 minutes, then transfer it to a wire rack for complete cooling.
- Top with vegan cream cheese frosting once cooled if desired.
Notes
Using fresh, organic carrots can enhance the flavor. Don’t overmix the batter to avoid a dense loaf. Adjust baking time based on pan size.
