- 3 cloves garlic, minced
- 500 grams mushrooms (such as cremini or button), sliced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and freshly ground black pepper to taste
- 1 tablespoon all-purpose flour
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 cup coconut milk or cashew cream
- 250 grams pasta of choice (such as fettuccine or penne)
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Add the sliced mushrooms to the skillet, cooking until they are golden brown and have released their moisture, about 8-10 minutes.
- Stir in the dried thyme, paprika, salt, and pepper. Cook for another minute, stirring to combine.
- Sprinkle the flour over the mushroom mixture and stir to coat. Cook for 1-2 minutes, allowing the flour to cook through.
- Gradually pour in the vegetable broth and soy sauce, stirring constantly to avoid lumps from forming.
- Once the sauce starts to thicken, lower the heat and stir in the coconut milk or cashew cream. Simmer for an additional 10 minutes, stirring occasionally.
- While the sauce is simmering, cook the pasta according to package instructions until al dente. Drain and set aside.
- Combine the cooked pasta with the mushroom sauce, stirring gently to coat the pasta evenly.
- Serve the vegan mushroom stroganoff hot, garnished with chopped fresh parsley.
