Ingredients

  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 1/4 cup maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 cups cooked chickpeas (or one 15 oz can, drained and rinsed)
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving
  • Steamed or roasted vegetables, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  2. In a small bowl, mix together soy sauce, maple syrup, rice vinegar, and toasted sesame oil to create the sauce.
  3. Pour the sauce mixture into the skillet with the onions and garlic, stirring well. Dissolve cornstarch in water and pour into the skillet, stirring continuously until the sauce thickens.
  4. Add cooked chickpeas to the skillet, stirring until they are evenly coated. Let them simmer for 5-7 minutes to allow flavors to meld.
  5. Sprinkle sesame seeds and sliced green onions over the chickpeas. Adjust seasoning with salt and pepper, then serve over rice or quinoa, alongside vegetables.
