Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for another 1-2 minutes until fragrant.
- In a small bowl, mix together soy sauce, maple syrup, rice vinegar, and toasted sesame oil to create the sauce.
- Pour the sauce mixture into the skillet with the onions and garlic, stirring well. Dissolve cornstarch in water and pour into the skillet, stirring continuously until the sauce thickens.
- Add cooked chickpeas to the skillet, stirring until they are evenly coated. Let them simmer for 5-7 minutes to allow flavors to meld.
- Sprinkle sesame seeds and sliced green onions over the chickpeas. Adjust seasoning with salt and pepper, then serve over rice or quinoa, alongside vegetables.
