Ingredients

- 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 cup heavy cream (or milk)
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup seasoned breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Chop the mixed vegetables into bite-sized pieces.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
- Stir in the heavy cream and seasonings, letting it simmer for about 5 minutes until slightly thickened.
- Add the chopped vegetables to the skillet, stirring to coat them evenly in the creamy mixture.
- Transfer the mixture to a greased baking dish, ensuring it’s evenly spread out.
- Mix the breadcrumbs with olive oil and sprinkle evenly over the top of the vegetable mixture.
- Bake for 30-35 minutes or until the top is golden brown and bubbling.
Notes
Feel free to use any vegetables you like! Adjust cheese amounts based on your preferences. Make sure to drain excess moisture from vegetables.
