Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
- Add the mushrooms and cook for about 5 minutes until they are tender.
- Pour in the vegetable broth and bring to a boil.
- Stir in the orzo and cook according to package instructions, usually about 7-9 minutes.
- Once the orzo is cooked, add the chopped spinach and cook until wilted.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Serve warm and enjoy!

For a vegan option, consider substituting Parmesan cheese with nutritional yeast.
