Ingredients

  • 1 can Black beans, drained and rinsed
  • 1 cup Mixed vegetables (e.g., bell peppers, corn, carrots)
  • 2 cups Vegetable broth or water
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the mixed vegetables and sauté for about 3-5 minutes until softened.
  3. Stir in the rice and cook for 1-2 minutes, lightly toasting it.
  4. Incorporate the black beans, cumin, garlic powder, salt, and pepper.
