Ingredients
1 lb ground venison (80/20 mix with fat)
1 large egg (as binder)
1/4 cup breadcrumbs or crushed crackers
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper to taste
4 brioche buns
4 slices cheddar or smoked gouda
Fresh toppings: lettuce, tomato, caramelized onions
1 tbsp olive oil or butter (for cooking)
Instructions
1. In a chilled bowl, combine ground venison, egg, breadcrumbs, Worcestershire sauce, and spices.
2. Gently mix ingredients to avoid overworking the meat.
3. Shape into 4 patties, 3/4 inch thick, making a small indentation in the center of each.
4. Preheat grill or skillet to medium-high heat. Brush with olive oil or butter.
5. Cook patties for 3-4 minutes per side, flipping once, until internal temperature reaches 160°F.
6. Add cheese slices in the last minute of cooking to melt.
7. Toast brioche buns lightly.
8. Assemble burgers with toppings of your choice and serve immediately.
Notes
For extra juiciness, add 2 tbsp of finely chopped bacon or beef fat to the mixture.
You can substitute breadcrumbs with ground oats or almond flour for gluten-free versions.
