Description

Vichy Carrots are sweet, buttery, and easy to make, making them a great side dish that complements many meals.

Ingredients

  • Carrots
  • Water
  • Butter
  • Sugar
  • Salt
  • Fresh parsley (for garnish)

Instructions

  1. Peel the carrots and cut them into evenly sized pieces.
  2. Place the carrots in a saucepan and cover them with water.
  3. Add a pinch of salt, sugar, and a tablespoon of butter to the water.
  4. Bring to a boil over medium heat, then reduce to a simmer and cook until the carrots are tender, about 15-20 minutes.
  5. Once the water has reduced and a glaze forms, remove from heat.
  6. Adjust seasoning if necessary and garnish with fresh parsley before serving.

Notes

Choose young, fresh carrots for the best flavor. You can use vegetable broth instead of water for added flavor.
