  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, dried cranberries, pumpkin seeds, or a dollop of yogurt

Instructions

  1. In a medium-sized saucepan, combine the rolled oats and almond milk. Bring to a gentle boil over medium heat, stirring occasionally.
  2. Once boiling, reduce the heat to low and stir in the pumpkin puree, pumpkin pie spice, ground cinnamon, maple syrup, vanilla extract, and a pinch of salt.
  3. Continue to cook on low heat, stirring frequently until the oatmeal reaches your desired thickness (about 5-7 minutes).
  4. Taste and adjust sweetness or spices to your preference.
  5. Remove from heat and let sit for a minute or two to thicken further.
  6. Serve warm in bowls with desired toppings.
