  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Start by chopping the onion, mincing the garlic, and slicing the mushrooms.
  2. Sauté the onions: In a large pot over medium heat, add olive oil and sauté the onions until they’re translucent, about 5 minutes.
  3. Add garlic and mushrooms: Stir in the minced garlic and cook for an additional minute. Then, add the sliced mushrooms with a pinch of salt; sauté until they release their moisture and are tender, about 7-10 minutes.
  4. Simmer the stew: Add the cooked white beans and vegetable broth, stirring well. Bring to a simmer, then mix in the thyme and bay leaf. Let it simmer uncovered for 20-30 minutes.
