  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Start by chopping the onion, mincing the garlic, and slicing the mushrooms.
  2. Sauté the onions: In a large pot over medium heat, add the olive oil. Once it’s hot, toss in the chopped onions and sauté until translucent, about 5 minutes.
  3. Add garlic and mushrooms: Add the minced garlic and cook for an additional minute. Then stir in the sliced mushrooms along with a pinch of salt. Sauté until tender, about 7-10 minutes.
  4. Combine everything: Add the cooked white beans and vegetable broth. Bring to a gentle simmer, mix in fresh thyme leaves, and add the bay leaf. Let simmer uncovered for 20-30 minutes.
  5. Final touches: Season with salt and pepper to taste. Optionally, blend part of the stew for a creamier texture before serving.
