Ingredients

  • 250 grams sliced mushrooms (cremini or button)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Chop the onion, mince the garlic, and slice the mushrooms.
  2. Sauté the onions: In a large pot over medium heat, heat the olive oil and add the chopped onions. Sauté until translucent, about 5 minutes.
  3. Add the garlic and mushrooms: Add minced garlic and cook for an additional minute, then add sliced mushrooms and a pinch of salt. Sauté until tender, about 7-10 minutes.
  4. Combine the main ingredients: Add cooked white beans and vegetable broth. Bring to a simmer, toss in thyme and bay leaf, and let simmer uncovered for 20-30 minutes.
  5. Final seasoning: Taste and adjust salt and pepper. For a creamier texture, blend part of the stew with an immersion blender if desired.

Notes
