Description
A creamy, hearty, and flavorful white chicken chili recipe made with tender chicken, white beans, spices, and a touch of cream. Perfect for family dinners or meal prep.
Ingredients
2 tablespoons olive oil
1 medium onion diced
3 cloves garlic minced
1 ½ pounds chicken breast or thighs
4 cups chicken broth
2 cans great northern beans drained
2 cans mild green chilies
1 teaspoon cumin
1 teaspoon oregano
½ teaspoon paprika
½ teaspoon chili flakes optional
1 teaspoon salt
½ teaspoon black pepper
4 ounces cream cheese
½ cup sour cream
1 cup Monterey Jack cheese shredded
Juice of 1 lime
Fresh cilantro and avocado for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft and fragrant.
2. Add chicken pieces and sear lightly on both sides.
3. Pour in chicken broth, beans, green chilies, and spices. Stir to combine.
4. Cover and let simmer for about 25 minutes or until chicken is cooked through.
5. Remove chicken, shred it with two forks, and return it to the pot.
6. Stir in cream cheese, sour cream, and shredded cheese. Mix until creamy and smooth.
7. Simmer for another 5 minutes to allow flavors to meld.
8. Serve hot, garnished with lime juice, cilantro, avocado, and extra cheese if desired.
Notes
For extra spice, add diced jalapeños or cayenne pepper.
This chili can be made in a slow cooker or Instant Pot for convenience.
Freezes well for up to three months in airtight containers.
