Instructions
- Begin by melting the white chocolate chips in either a microwave or a double boiler, stirring in between to avoid burning.
- In a mixing bowl, combine the softened cream cheese and powdered sugar; mix until smooth.
- Add the slightly cooled melted white chocolate and vanilla extract, mixing until well-combined.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cheesecake mixture.
- Take the raspberry puree and swirl it into the cheesecake mixture for a marbled effect.
- Pour the cheesecake filling into the prepared graham cracker crust and smooth the top.
- Place the cheesecake in the refrigerator to chill for at least 4 hours or until set.
- Once set, serve chilled and optionally garnish with fresh raspberries or drizzle with raspberry sauce.
