Instructions
- Whip the cream: In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
- Prepare the mascarpone: In another bowl, mix together the mascarpone cheese and melted white chocolate until smooth.
- Combine mixtures: Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Layer the ladyfingers: Dip the ladyfingers briefly in the raspberry puree and layer them in a dish.
- Add mascarpone mixture: Spread half of the mascarpone mixture over the ladyfingers, then add a layer of fresh raspberries.
- Repeat layers: Follow with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Chill: Cover the dish and chill in the refrigerator for at least 4 hours, or overnight.
- Dust and garnish: Before serving, dust the top with cocoa powder and garnish with fresh raspberries.
