- 1 can of butter beans, drained and rinsed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon zest of lemon
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the drained butter beans and cook for 3–4 minutes, stirring occasionally.
- Add lemon juice and zest, and season with salt and pepper.
- Cook for an additional 2 minutes, then remove from heat.
- Garnish with chopped parsley before serving.
