Description

Ingredients

  • 1 can of butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon zest of lemon
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the drained butter beans and cook for 3–4 minutes, stirring occasionally.
  4. Add lemon juice and zest, and season with salt and pepper.
  5. Cook for an additional 2 minutes, then remove from heat.
  6. Garnish with chopped parsley before serving.
