Description

A delightful dish featuring juicy chicken meatballs infused with fresh herbs and served over creamy lemon orzo.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon (zest and juice)
  • 8 oz orzo pasta
  • 2 cups chicken broth
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, lemon zest, and half of the lemon juice.
  3. Form the mixture into meatballs and place on a baking sheet. Drizzle with olive oil and bake for 20-25 minutes or until cooked through.
  4. Meanwhile, cook the orzo in chicken broth according to package instructions.
  5. Once cooked, stir in the remaining lemon juice and season with salt and pepper.
  6. Serve meatballs over lemon orzo, garnished with additional parsley if desired.

Notes

Use fresh herbs for best flavor, and ensure chicken is pat-dried to avoid mushy meatballs.
