- 4 pieces Bone-in chicken thighs (skin-on for crispy texture)
- 1/4 cup Extra-virgin olive oil (or avocado oil as substitute)
- 1/4 cup Lemon juice (lime juice can be used for variation)
- 4 cloves Garlic (minced)
- 1 tablespoon Dried oregano (fresh can be substituted)
- 1 teaspoon Dried thyme (can be omitted if desired)
- 1 tablespoon Dijon mustard (regular mustard as alternative)
- 1 teaspoon Kosher salt
- 1/2 teaspoon Freshly ground black pepper
- 2–3 minutes Broiling option (for extra crispy skin)
Instructions
- In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper. Add chicken thighs, coat well, cover, and marinate for at least 15 minutes or up to a couple of hours.
- Preheat your oven to 400°F (200°C) while the chicken marinates.
- Place the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper. Bake for about 25 minutes until golden and reaches an internal temperature of 165°F (74°C).
- For extra crispy skin, switch to broil for the last 2-3 minutes, keeping a close watch.
- Let the chicken rest for a few minutes before serving to ensure juiciness.
Notes
Use fresh ingredients for better flavor. Marinating the chicken for longer enhances the taste.
